Why is it So Hard to Make Homemade Pad Thai?

I really like to cook. Both of my parents did, and it’s a habit/skill I picked up from them at an early age. Over the years I’ve learned how to make almost everything I love, but I’ve become resigned to a couple of specific dishes that I can just never get right. One of those is pizza, and for that I fault the lack of equipment in my kitchen – I’m convinced you need a special oven. But the other is Asian cuisine, specifically pad thai, and SERIOUSLY for that I have no excuse. It’s just impossible to make right!

I’ve tried homemade recipes where you go to Uwajimaya and buy $30 worth of sauces and seasonings and other things you wouldn’t have in an American kitchen for any other reason. I’ve tried the absurdly overpriced pre-mixed kits from the grocery store, which cost as much as just getting take out by the time you add the chicken and veggies. I’ve tried ‘em all. And no matter what I try, it never comes out right. Thai food being so cheap and abundantly available in Seattle, it’s an easy fight to give up.

And yet there’s a certain badge of pride with winning a difficult battle. It’s probably something that was hammered into me as a kid playing video games, dying and reloading and trying again until I finally figured out how to beat the level. I’m not ready to completely give up on that fight. So tonight I’m going to go home, fire up my wok, and try my hand once again at making a decent batch of pad thai. I’m pretty sure we all know how this is going to end up, but maybe not. Maybe this is the time I get it right. Any of you have tips to offer?
